Ingredients

  • 1 1/2 lbs. chicken breasts, boneless skinless, cut into bite-size pieces
  • 1 pound sausage, cut into ¼ inch slices (andouille or Kielbasa sausage)
  • 1 1/4 cup white rice, long-grain
  • 1 tablespoon vegetable
  • 2 tablespoons all-purpose flour
  • 4 cloves garlic, finely minced
  • 3 ribs celery, chopped
  • 2 tablespoons butter
  • 4 green onions, chopped
  • 1 white onion, chopped
  • 1 bell pepper, chopped
  • 1 1/2 teaspoon Cajun seasoning
  • 1 1/2 teaspoon dried basil
  • ½ teaspoon black pepper
  • 1 teaspoon kosher salt
  • 1 (14.5 oz.) can diced tomatoes
  • 1/4 teaspoon cayenne pepper, optional
  • 2 1/2 cups low-sodium chicken broth

Instructions

  1. Heat a large skillet over medium high heat. Add oil, once hot, add the chicken and cook until browned on both sides. Do not fully cook through. Transfer to a plate.

  6. Add chicken broth and rice. Stir well and bring to a boil. Add the sausage and chicken to the pan.
  7. Cover with lid, reduce the heat and cook for 18-20 minutes or until cooked.
  8. Remove from heat and rest for about 10-15 minutes. Take a flat surface spatula to serve so that the the rice doesn't break in half.
