Ingredients

  • 1 1/2 pounds, chicken breasts, , pounded to ¼ inch thickness
  • 2 cups almond flour
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 cup parmesan cheese
  • 2 tablespoon oil to fry
  • 3 large eggs

Topping

  • 1 1/2 cups mozzarella cheese, freshly sliced
  • 2 cups marinara sauce, low carb
  • 1/3 cup parmesan cheese

Instructions

  1. Season each chicken breast with salt. Lightly coat with almond flour on both sides.
  2. In a small bowl, add the eggs and whisk. In another bowl, add the garlic powder, onion powder, parmesan cheese, and the remaining almond flour.
  3. Dip each chicken breast in the egg bowl, then into the almond flour mixture. Repeat the same for the remaining chicken.
  4. Heat a pan over medium heat. Add oil, once hot, add the chicken and cook for about 2-3 minutes. Flip and cook for another 3 minutes or until golden brown on both sides.
  5. Transfer to a plate paper lined towel, to soak up excess oil.
  6. Preheat oven to 400 degrees.
  7. Line a large baking sheet with parchment paper.
  8. Place the fried chicken onto the baking sheet. Top with marinara sauce and then mozzarella cheese on each (2-3 slices) and parmesan cheese (2 tablespoons).
  9. Bake for about 10-15 minutes or until golden on top and the cheese is melted and bubbly.
  10. Remove from the oven and serve immediately.
