Ingredients

For the chicken marinade

  • 3-4 lbs chicken thighs, boneless skinless, cut into 1 inch cubes
  • 1 teaspoon chicken bouillon, Better Than Bouillon
  • 1/2 cup white wine
  • 1/2 cup Olive Oil
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 tablespoons lemon juice, freshly squeezed

For the panko breading

  • 1 cup parmesan cheese, grated
  • 2 teaspoons red pepper flakes
  • 1 cup panko crumbs
  • 1/2 cup breadcrumbs plain or seasoned
  • 1 1/2 tablespoons garlic powder
  • 1 tablespoon oregano
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper

For the sauce

  • 3 tablespoons fresh lemon juice
  • 1 stick salted butter, sliced

Instructions

  1. In a large bowl, add chicken, lemon juice, olive oil, chicken bouillon, white wine, black pepper, and salt. Combine well and let it sit in the refrigerator for atleast 30 minutes to an hour.
  2. In another bowl, mix panko crumbs and bread crumbs, garlic powder, oregano, parmesan, red pepper flakes, salt and pepper.
  3. Preheat grill to medium high. Lightly oil the oil.
  4. Remove chicken from the marinade, add to the breadcrumb mixture and toss to coat. Add chicken to skewers.
  5. Add chicken skewers to the preheated grill and cook for about 5-6 minutes, flip side and cook for another 4-5 minutes or until cooked through and the internal temperature reaches 165°F.
  6. Meanwhile, add the butter in a microwave safe bowl and microwave for 45 seconds until melted. Stir in lemon juice and set aside.
  7. Brush the skewers with lemon butter sauce. Enjoy!
  8. Alternatively, Preheat oven to 400 degrees. Bake for about 10-15 minutes, and broil for about 3-4 minutes on each side.
