Ingredients

  • 2 -3 lbs boneless, skinless, chicken breast
  • 1 cup chicken stock
  • 1 teaspoon brown sugar
  • 1 teaspoon kosher salt
  • ½ teaspoon garlic powder
  • ½ teaspoon freshly cracked pepper
  • 1 teaspoon Italian seasoning, oregano, basil or thyme

Instructions

  1. Line an instant pot with the trivet insert. Pour the stock.
  2. In a large bowl, add the chicken. Sprinkle with brown sugar, garlic powder, italian seasoning, salt and pepper. Toss until well coated with the chicken.
  3. Single layer the chicken into the instant pot. Secure the lid and vent in the closed position.
  4. Pressure cook on high for about 10-15 minutes (depending if use fresh or frozen).
  5. Do a natural pressure release after its done cooking. Measure the internal temperature with instant thermometer and it should read 165°.
  6. Allow the chicken to rest for at least 5-7 minutes before shredding.
