Ingredients
Chicken
- 1 pound chicken breasts, boneless, skinless, cut into 1-inch strips
- 2 tablespoons soy sauce, low-sodium
- 2 minced garlic cloves
- 1/2 tablespoon fish sauce
- 2 tablespoons lime juice, freshly squeezed
- 1 tablespoon Sriracha
- 2 teaspoons ground ginger
- 1 tablespoon honey
Peanut Sauce
- 1 cup chicken broth, low sodium
- 5 tablespoons creamy peanut butter
- 1 tablespoon honey
- 1 teaspoon ground ginger
- 2 cloves garlic minced
- 1 tablespoon soy sauce, low-sodium
- 2 teaspoons Sriracha
- 2 teaspoons fish sauce
- 1 tablespoon lime juice, freshly squeezed
To Serve
- Corainder leaves, freshly chopped
- Roasted peanuts, unsalted
- Lime wedges, for serving
Instructions
- In a mixing bowl, add soy sauce, honey, Sriracha, fish sauce, lime juice, ginger, and minced garlic. Combine well.
- Add the chicken pieces and coat well. Cover and place in the refrigerator for atleast 2 hours. Take out from the fridge and let sit for 30 minutes before grilling.
- Make the peanut sauce: In a saucepan,add the peanut butter, soy sauce, fish sauce, ginger, garlic, chicken broth, honey, and Sriracha. Combine well.
- Bring to a boil, lower the heat and simmer on medium heat for about 6 minutes or until the sauce is thickened and smooth. Stir in the lime juice and set aside.
- Preheat the grill on medium-high. Thread the chicken onto skewers and grill for about 2-3 minutes on each side or until cooked through.
- Sprinkle with roasted peanuts and freshly chopped corainder leaves.
- Garnish with lime wedges and serve immediately with peanut sauce.
