Ingredients

For the Chicken

  • 2 chicken breasts, boneless skinless
  • 2 garlic cloves
  • 1 small onion
  • ¼ teaspoon black pepper, freshly ground
  • ½ teaspoon salt
  • 1 bay leaf

For the Sauce

  • 4 roma tomatoes
  • 1 onion, cut into chunks
  • 1/2 teaspoon ground cumin
  • 1 Tablespoon olive oil
  • 2 cloves garlic
  • 1 teaspoon chicken bouillon
  • 1 teaspoon dried oregano leaves
  • 1 teaspoon adobo sauce, plus 1 chipotle chili

For Serving

  • Sliced avocado
  • Tostada shells, or tortillas
  • Sour cream
  • Lettuce, finely shredded
  • Fresh coriander

Instructions

  1. Heat a pot water to boil. Add chicken, salt, pepper, onion, garlic, and bay leaf. Cover and bring to a simmer.
  2. Lower the heat and simmer for around 18-20 minutes or until cooked through.
  3. Remove chicken to a plate and let sit for about 10 minutes, reserve 1 cup of broth and discard the rest.
  4. Heat the same pot on medium-high heat. Add oil, and once hot, add tomatoes, and stir cook for about 2-3 minutes. Add onion and cook for another 2-3 minutes.
  5. Add the onion and tomatoes to a blender, add ½ cup of reserved broth, chicken bouillon, oregano, adobo sauce and chipotle chile, garlic cloves, and cumin. Pulse until smooth paste.
  6. Pour the mixture into the pot. Cook for 4-5 minutes. Adjust salt, seasoning and additional adobo sauce, or broth, as per taste.
  7. Shred the chicken and add it back to the pot. Combine until well coated.
  8. Add the chicken mixture in a warm tortilla, top with shredded lettuce, sour cream, chopped cilantro and sliced avocado.
