Ingredients
For the chicken
- 4 Chicken Thighs, boneless skinless
- Vegetable Oil, for deep frying
For the Marinade
- 1 cup Buttermilk
- 1 tsp Paprika
- 1 tsp Salt
- 1/2 tsp Onion Powder
- 1/2 tsp Garlic Powder
- 1/2 tsp White Pepper
- 1/2 tsp Cayenne Pepper
For the Breading
- 1 3/4 cups All Purpose Flour
- 2 tsp Paprika
- 1 tsp Baking Powder
- 1 tsp Oregano
- 1 tsp Salt
- 1/2 tsp Onion Powder,
- 1/2 tsp Garlic Powder,
- 1/2 tsp Cayenne Pepper
- 1/4 tsp Black Pepper
For the Sandwich
- 4 Burger Buns, toasted
- 1/2 head of Lettuce, shredded
- sliced Bread & Butter Pickles/Gherkins, to preference
For the Mayo
- 1/2 cup Mayo, Full Fat
- 1 tbsp Honey,
- 1 tbsp Pickle Juice
- 1 tbsp Sriracha
Instructions
- Pound the chicken to even thickness and pat dry with paper towels.
- In a medium bowl, combine buttermilk, garlic powder, white pepper, salt and paprika, onion powder, and cayenne pepper.
- Rub into the chicken thighs and coat well. Cover and marinate in the fridge for atleast 3-4 hours. Take out from the fridge before 30 minutes of making.
- In a shallow bowl, combine flour, paprika, baking powder, onion powder, garlic powder, salt and oregano, onion powder, garlic powder, cayenne pepper and black pepper.
- Dredge the chicken into the flour mixture and transfer to a plate.
- Heat a large pan on high heat, add oil. Once hot, add the coated chicken and fry for about 3-4 minutes on each side or until deep golden browned.
- Remove from the pan and rest on wire rack with paper towels to soak up oil. Fry the remaining chicken pieces.
- In a small pot, combine honey, mayo, sriracha.
- Place the toasted bun (bottom side), add mayo, lettuce, fried chicken, pickles, the top the other half of the bun with mayo spread.
