Ingredients

  • 2 1/2 lbs chicken breast, boneless skinless, sliced
  • 3 tbsp butter, divided
  • 2 tbsp chicken broth
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 12 oz steam bag of frozen broccoli
  • 1/2 tsp Italian seasoning
  • 1 oz cream cheese, softened
  • 3 garlic cloves, minced
  • 1 cup heavy whipping cream
  • 3/4 cup mozzarella cheese, grated
  • 2/3 cup parmesan cheese, grated
  • 1/4 cup pepper jack cheese, grated
  • 1/4 tsp basil

Instructions

  1. Heat a skillet over medium heat. Melt butter. Season chicken with salt pepper on both the sides.
  2. Add to the skillet and sear cook on both sides. Cook on low or until chicken is no longer pink. Remove from the skillet and set aside.
  3. Pour chicken broth to deglaze the pan. Scrape off any excess flavorful bits from the bottom of the pan.
  4. Steam the broccoli in boiling water or as per the package instructions in the microwave.
  5. Add 2 tbsp butter to the skillet. Add minced garlic and saute for 2-3 minutes or until fragrant.
  6. Add heavy whipping cream, Italian seasoning and cream cheese to the skillet, Stir until thoroughly combined.
  7. Lower heat medium low and simmer the sauce until reduced and thickened. Keep whisking and stir continuosly.
  8. Add the parmesan and pepper jack cheese, Stir cook until the sauce is smooth and cheese melts.
  9. Add drained steamed broccoli along with the cooked chicken to the sauce and stir to combine.
  10. Sprinkle mozzarella cheese followed by basil on top.
  11. Place the skillet in the oven under the broiler and bake until cheese begins to bubble for about 1-2 minutes.
