- 3 pounds chicken thighs
- 2 large carrots, chopped
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 stalks celery, chopped
- 5 garlic cloves, minced
- 1 teaspoon pepper
- 1 teaspoon salt
- 2 bay leaves
- 6-8 cups chicken broth
- 2 cups cauliflower rice
Instructions
