Ingredients
- 175 grams Chicken thighs, Boneless
- 50 grams Tomato, sliced
- 100 grams Lettuce, sliced
- 30 grams Olives, sliced
- 100 grams Cucumber, sliced
- 1 Tbsp Greek Yogurt, Full Fat
- 50 grams Feta Cheese
- 2 Tbsp olive oil
- 1 Tsp Lime or Lemon Juice
- 1/2 Tbsp Butter
- 1/2 Tbsp Apple Cider Vinega
- 1/2 Tbsp Olive oil, for marinating
- 1/2 Tbsp Bacon Fat, for frying
- 1 Tsp Dried Herb Seasoning Mix
- Cayenne Pepper
- Pepper
Instructions
- In a bowl, season chicken with salt, apple cider vinegar pepper, mixed herbs, and olive oil. Let it marinate.
- In a frying pan, heat the bacon fat, then add the chicken. Alternatively, use olive oil, butter or ghee etc for the fat.
- Cook the chicken for about 2-3 minutes, flip and cook on another side. Add the butter to the pan and baste the chicken.
- Once the chicken is cooked remove from the pan and set aside. Remove all the residual fat from the pan.
Once the chicken has cool down, remove the juices and set aside. - In a mixing bowl, add yogurt, lemon juice, resting juices and olive oil. Mix well and season with salt, pepper and cayenne.
- Place all the vegetables into the bowl. Slice the cooked chicken and add to the salad bowl.
- Crumble in the feta cheese and pour over that salad dressing
- Serve immediately.
