Ingredients

  • 3 pounds chicken thighs, Bone-in
  • 6-8 cups chicken broth
  • 1 tablespoon olive oil
  • 2 large carrots, chopped
  • 2 stalks celery, chopped, about 2 cups
  • 5 cloves garlic, minced
  • 1 large onion, chopped
  • 1 teaspoon pepper
  • 1 teaspoon salt
  • 2 cups cauliflower rice
  • 2 bay leaves

Instructions
