Ingredients

For the soup

  • 1 lb chicken breast, boneless skinless
  • 6 cups chicken broth, low sodium
  • 1 tbsp olive oil
  • 1/4 cup jalapeno, diced
  • 1/2 medium white onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup bell peppers, diced
  • 1 tsp sea salt
  • 1 (14.5-oz) can diced tomatoes, Fire roasted
  • 1/2 tsp black pepper
  • 1/8 tsp chili powder
  • 1 tsp cumin

For the toppings

  • 1/2 recipe tortilla chips, keto friendly
  • 1/3 cup shredded Monterey jack cheese
  • 1 medium sliced avocado
  • 1/3 cup sour cream
  • 1/4 cup fresh coriander, chopped
  • 6 lime wedges

Instructions

  1. Heat a dutch oven on medium-high heat. Add olive oil, Add garlic, onion, and bell peppers. Stir cook for about 3-5 minutes or until translucent and softened.
